3 Unique Recipes for Your Next Summertime Cookout

Grilling season is upon us, and our Elan Flower Mound oasis of a backyard is the ideal set-up for a day well spent outside. Having access to our Pool Pavilion, complete with al fresco kitchen, grills and a TV lounge make cooking up our favorite recipes a no brainer. We invite you to soak up this Texas sunshine, and impress your palates with these recipes for grilled goodness. Let’s start up the barbecues!


Caprese Stuffed Garlic Butter Portobellos

Prep Time: 5 minutes / Cook Time: 10 minutes

Dare to be different with this deliciously addictive dish. Bold flavors and simple ingredients combine to make a recipe your cookout didn’t know it was missing, but needed.  If you like it cheesy, then even better. This super simple combo will not only look good on your grill but taste good coming off of it.


  • Garlic butter
  • 2 tablespoons butter
  • 2 cloves garlic, crushed
  • 1 tablespoon freshly chopped parsley


  • 5-6 large Portobello Mushrooms, stem removed, washed and dried thoroughly with a paper towel
  • 5-6 fresh mozzarella cheese balls, sliced thinly
  • 1 cup grape (or cherry) tomatoes, sliced thinly
  • fresh basil, shredded to garnish

Balsamic Glaze:

  • 1/4 cup balsamic vinegar
  • 2 teaspoons brown sugar (OPTIONAL)

Grilled Mexican Sweet Corn

Prep Time: 5 minutes / Cook Time: 20 minutes

Sweet, tender and spicy! If you truly want to impress your friends or family, while satisfying your own summertime cravings, then this recipe will do the trick. We can’t think of anything more crave-worthy or fitting for a cookout than Elotes. Take corn on the cobb to the next level.

Cinnamon Sugar Grilled Peaches

Prep Time: 5 minutes / Cook Time: 8 minutes

Pour some suga on me! Every cookout calls for something sweet, and this recipe will undoubtedly fill that role. Indulge your sweet tooth with this Summer themed dessert, and while you’re at it, help yourself to seconds too. We won’t tell. Not to mention, it’s incredibly easy to make and quick enough to keep your BBQ buds from waiting.


  • 1/4 cup salted butter, at room temperature
  • 1 tbsp + 1 tsp. granulated sugar
  • 1/4 tsp cinnamon
  • 4 ripe yellow-flesh peaches, halved and pitted
  • Vegetable oil
